INGREDIENTS:

150gr / 0.5oz of rice flour
1 tsp baking powder
100gr / 3.5oz brown sugar
2 apples*
1 lemon or orange zest
3 eggs

*in the original recipe they used grated apples, but we used one grated and one cut in small pieces. 

PREPARATION:

Preheat oven to 160˚C / 320˚F.

Whip eggs, sugar and lemon for about 10 minutes, continue whipping while adding the baking powder and flour. Then add the apple and mix to blend with a spatula.

Cook for about 20 minutes in bread loaf pan or 15 if you are doing cupcakes.
