8 small portobello mushrooms
1 yellow pepper cut in small squares
1 red pepper cut in small squares
1/2 white onion finely chopped
1 garlic clove finely chopped
2 small tomatoes chopped
mozzarella squares or any other melting cheese
salt and pepper to taste
oil cooking spay*

*if you do not have the cooking spay you can replace it with regular oil, but be aware that the recipe won’t be as healthy. 


Spay a big skillet with cooking oil and sauté onion with a little bit of water* until they turn transparent. Add the garlic, the bell peppers and lastly the tomato. Add salt and pepper to taste y cook for about 5 minutes.
Add the mushrooms with the opening facing down, cover and cook for 2 more minutes.
Turn mushrooms around and fill them with the peppers leaving them in the same skillet. Add the cheese on top, cover and gratine.

*if you are using oil instead of cooking spay you do not need to add the water.
